Indulge a Craving: Watermelon Radish

Twenty-six weeks pregnant and I crave radishes. Watermelon radishes were my weekend delight, discovered at the Carroll Street Farmer’s Market. Oh, how delicious!

First I just cut and ate one, plain and simple. Then I decided to add a little salt. Since I am also craving lemon right now, I went ahead and added some lemon juice to my final bites. Yum, yum! A mild, peppery, yet sweet indulgence, green on the outside and beautifully pink on the inside, each slice becomesย a beautiful sliver. Watermelon radishes are a nutritious root vegetable known for their antioxidant, vitamin, and mineral content. These radishes are low calorie with a high water content, making them extremely healthy and hydrating. They are also good for the digestive system. If you happen to come across one of these beauties, I encourage you to take a delicious crunchy bite. You will soon find yourself craving them as well!
